Indulge Mom with these decadent homemade truffles. She'll be delighted!
Ingredients:
  • 10 plain biscuits (such as Nice)
  • 125g butter, softened
  • 107.50 gm caster sugar
  • 86.63 gm orange juice or sweet sherry
  • 85.00 gm sultanas
  • 13.60 gm desiccated coconut
  • 20.00 gm cocoa powder
  • 42.50 gm desiccated coconut, extra
Instructions:
  • Crush biscuits into fine crumbs by placing them in a bag and using a rolling pin to gently roll over them. Alternatively, have an adult process the biscuits in a food processor for you to save time.
  • In a large bowl, use an electric mixer to whip together butter and sugar until pale. Mix in biscuit crumbs, orange juice or sherry, sultanas, coconut, and cocoa until fully combined. Cover the mixture with plastic wrap and refrigerate for 30 minutes until firm enough to roll.
  • Spread extra coconut on a plate. Take 2 teaspoonfuls of mixture and shape into small balls. Roll the balls in coconut and transfer to a large plate. Chill covered for at least 2 hours until firm. Pack in a box or cellophane bag and embellish for a special touch on Mom's day.
