Hearty muesli pancakes for a satisfying meal.
Ingredients:
  • 300.00 gm self-raising flour
  • 6.00 gm baking powder
  • 312.50 ml natural low-fat muesli
  • 53.75 gm caster sugar
  • 3 free range eggs
  • 386.25 gm milk
  • 75g butter, melted, cooled (plus cold butter for cooking)
  • 6.60 gm vanilla essence
  • Fresh fruit, to serve
  • Maple syrup, to serve
  • Vanilla yoghurt, to serve
Instructions:
  • Preheat oven to 120C or 100C fan. In a large bowl, sift flour and baking powder together. Add muesli and sugar, then make a well in the center.
  • Whisk together eggs, milk, butter, and vanilla in a jug. Pour the mixture into the dry ingredients and gently stir to combine, being careful not to overmix.
  • Preheat a large frying pan over medium-low heat. Use a paper towel to spread a piece of cold butter on the surface of the pan, setting it aside on a plate for reuse. Pour 1/3 cup of the mixture into the pan in batches, cooking for about 2 1/2 minutes until bubbles form. Flip and cook for an additional 1 1/2 minutes.
  • Transfer the dish to an oven-safe plate, cover it loosely with foil, and place it in the oven to stay warm while you prepare the remaining dishes.
  • Garnish with fresh fruit, creamy yogurt, and drizzle with maple syrup before serving.
