Indulge in guilt-free mulberry muffins made with fresh berries for a healthier treat.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.5 cup white sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 pinch salt
  • 0.5 cup fat free sour cream
  • 0.25 cup skim milk
  • 2 tablespoons applesauce
  • 1 egg
  • 0.5 teaspoon almond extract
  • 0.5 cup mulberries
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare 6 jumbo muffin cups by greasing them or lining them with paper liners.
  • In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, mix sour cream, milk, applesauce, egg, and almond extract until well combined. Gently fold in the flour mixture until you have a smooth batter, then gently fold in the mulberries. Spoon the batter into muffin cups.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of a muffin comes out clean.
