Customize these delicious multigrain pancakes with fruit, banana, nuts, or chocolate chips for a tasty breakfast treat.
Ingredients:
  • 0.25 cup whole wheat flour
  • 0.25 cup all-purpose flour
  • 0.25 cup rolled oats
  • 0.25 cup cornmeal
  • 2 teaspoons granular no-calorie sucralose sweetener (e.g., Splenda ®)
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 2 large egg whites
  • 2 tablespoons plain nonfat yogurt
  • 2 tablespoons skim milk
Instructions:
  • Combine the flours, oats, cornmeal, sweetener, baking powder, salt, baking soda, and cinnamon in a medium bowl and whisk together.
  • Combine egg whites, yogurt, milk, and water in a separate bowl, whisking until well blended. Pour the mixture into the flour and mix until just moistened.
  • Preheat a skillet over medium heat and lightly grease it with cooking spray. Pour about 1/3 cup of batter per pancake onto the skillet in batches if needed. Cook until bubbles appear in the center, approximately 2 to 4 minutes. Flip and cook until golden brown on the other side, about 1 to 2 minutes.
