Enhance rice and mushrooms with savory Progresso® broth for a delicious side dish.
Ingredients:
  • 1/2 cup uncooked wild rice
  • 6 tablespoons butter or margarine
  • 1 large onion, chopped (1 cup)
  • 1 package (8 oz) sliced fresh baby portabella mushrooms
  • 1/2 cup uncooked regular brown rice
  • 2 3/4 cups Progresso™ beef-flavored broth (from 32-oz carton)
  • 2 teaspoons chopped fresh thyme leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarse ground black pepper
Instructions:
  • In a 3-quart saucepan over medium-high heat, melt 1/4 cup of butter. Sauté onion for 3 minutes in the butter. Then, add mushrooms and cook for an additional 3 minutes, stirring occasionally, until onion is tender and mushrooms are golden. Stir in wild rice and brown rice, cook and stir for 1 minute.
  • Pour in the flavorful broth, bringing it to a boil before lowering the heat. Cover and let it simmer for 45 to 50 minutes, until the rice reaches a tender perfection and absorbs all the rich liquid. Finish by gently mixing in the remaining 2 tablespoons of butter, along with the fragrant thyme, and season with salt and pepper to taste.
