Mustard greens sautéed with white beans, vinegar, mustard, and crushed red pepper for a flavorful, quick vegetarian dish.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced, or to taste
  • 1 tablespoon distilled white vinegar
  • 2 tablespoons water
  • 1 teaspoon white sugar
  • 0.75 teaspoon dry mustard powder
  • 0.5 teaspoon crushed red pepper flakes
  • 1 pound mustard greens, washed and chopped
  • 1 (15 ounce) can cannellini (white kidney) beans, drained
  • salt and ground black pepper to taste
Instructions:
  • Heat olive oil in a large Dutch oven over medium heat. Add onion and garlic. Cook and stir until onion is translucent, about 5 minutes.
  • Combine vinegar, water, sugar, dry mustard, and red pepper flakes in a bowl until sugar dissolves. Add mustard greens to onion and garlic mixture. Pour in vinegar mixture, stir well, cover, and bring to a boil. Simmer until liquid is absorbed, 5 to 10 minutes.
  • Combine the white beans, heat them, and season with salt and black pepper to taste.
