Spice up your stuffed peppers with aromatic ground cumin for a flavor-packed Mexican twist.
Ingredients:
  • 2 garlic cloves, crushed
  • 1 long red chilli, finely chopped
  • 10.00 gm ground cumin
  • 2 tsp ground coriander
  • 3.75 gm smoked paprika
  • 1 tsp dried oregano leaves
  • 450g beef mince
  • 22.20 gm tomato paste
  • 400g can crushed tomatoes
  • 400g can kidney beans, rinsed, drained
  • 82.50 ml fresh coriander leaves, chopped, plus extra, to serve
  • 4 capsicums, halved, deseeded
  • 80g (1 cup) coarsely grated cheddar
  • 40g gluten-free corn chips, coarsely crushed
  • Sour cream, to serve
  • Avocado wedges, to serve (optional)
  • Lime wedges, to serve (optional)
Instructions:
  • Preheat your oven to 200C/180C fan forced, and prepare a large baking tray by lining it with baking paper.
  • In a pan, warm 1 tablespoon of oil over gentle heat. Sauté the onion until soft, about 4 minutes. Stir in garlic and chili and cook for 1 minute until fragrant. Sprinkle in cumin, coriander, paprika, and oregano. Cook for 2 minutes, stirring occasionally, until fragrant.
  • Turn up the heat to medium-high and pour in the rest of the oil. Sauté the beef, using a wooden spoon to break it up, until it's browned, about 5 minutes. Mix in the tomato paste and cook for 1 minute. Toss in the tomato and lower the heat to medium. Cook covered, stirring sometimes, for 6 minutes. Add the kidney beans and cook covered for another 4 minutes until heated through. Finally, sprinkle in the coriander, season to taste, and enjoy!
  • Place the capsicum, cut-side up, on the prepared tray. Drizzle with olive oil, season with your favorite spices, and cover with foil. Roast for 15 minutes or until slightly tender.
  • Fill the capsicum halves with the beef mixture and top with the cheese and corn chip mixture. Bake for 15-17 minutes until golden and tender. Garnish with coriander and a dollop of sour cream. Serve with avocado and lime, if desired.
