Nachos-style baked potato skins

Family-favorite potato skins: a crowd-pleasing centerpiece for sharing.
Ingredients:
  • 8 (about 200g each) unpeeled baking potatoes (such as sebago or desiree), scrubbed
  • 80g cheddar cheese
  • 100g mozzarella
  • 35g packet taco seasoning mix
  • Sour cream, to serve
Instructions:
  • Preheat the oven to 180°C and line a baking tray with non-stick baking paper.
  • Prick the whole unpeeled potatoes with a fork and place them in a large baking dish. Bake for 40 minutes until tender. Let the potatoes stand for 15 minutes until cool to the touch.
  • Quarter the potatoes lengthwise and carefully remove some of the inner flesh, leaving about 1-1.5cm inside the skin. Arrange the hollowed potato quarters with the skin side down on the baking tray.
  • Mix the grated cheddar and mozzarella cheeses with the seasoning in a bowl, then sprinkle over the potatoes. Bake until the cheese is melted and golden, about 10 minutes.
  • Garnish with a dollop of sour cream.
