Irresistible no-bake Nanaimo bars with coconut-graham crust, creamy custard, and smooth chocolate layers. Worth every bite!
Ingredients:
  • 1 cup butter, softened, divided
  • 5 tablespoons unsweetened cocoa powder
  • 0.25 cup white sugar
  • 1 egg, beaten
  • 1.75 cups graham cracker crumbs
  • 1 cup flaked coconut
  • 0.5 cup finely chopped almonds
  • 3 tablespoons heavy cream
  • 2 tablespoons custard powder
  • 2 cups confectioners' sugar
  • 4 (1 ounce) squares semisweet baking chocolate
  • 2 teaspoons butter
Instructions:
  • In a double boiler, melt 1/2 cup of softened butter with cocoa powder and sugar until smooth. Beat in the egg until thickened, about 2 to 3 minutes. Stir occasionally.
  • Combine graham cracker crumbs, coconut, and almonds off the heat. Press mixture into an ungreased 8x8-inch pan.
  • In a bowl, beat the remaining 1/2 cup of softened butter, heavy cream, and custard powder until light and fluffy. Add confectioners' sugar and mix until smooth. Spread over the bottom layer in the pan and chill to set.
  • Melt semisweet chocolate and 2 teaspoons of butter together until smooth, using either the microwave or a gentle heat. Allow to cool while the second layer chills.
  • Spread the decadent melted chocolate over the chilled bars. Allow the luscious chocolate to firm up before slicing into delectable squares.
