Whip up a vibrant rainbow pancake stack with Bisquick mix, fresh strawberries, and cocoa for a fun twist on a classic ice cream favorite.
Ingredients:
  • 1 cup coarsely chopped strawberries
  • 2 cups Original Bisquick™ mix
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons unsweetened baking cocoa
  • 2 teaspoons sugar
  • 1 tablespoon water
  • Red food color, if desired
  • Chocolate-flavor syrup
  • Sliced fresh strawberries
Instructions:
  • Blend chopped strawberries in a food processor until smooth. Reserve for later use.
  • Combine Bisquick mix, milk, and eggs in a medium bowl until just mixed. Divide the batter equally into 3 small bowls, approximately 3/4 cup each.
  • Combine vanilla in one bowl, mix cocoa, sugar, and water in a second bowl, then fold in 1/4 cup of strawberry puree in a third bowl (save any extra for later use). Stir in a few drops of food coloring to the strawberry batter.
  • Prepare the griddle by spraying it with cooking spray and heating it over medium heat. Pour 1/4 cup of each batter onto the griddle for every pancake. Cook until bubbles form on top and edges are dry. Flip the pancake and cook until golden brown (for vanilla pancakes) or set (for chocolate and strawberry pancakes).
  • Arrange a chocolate pancake, a vanilla pancake, and a strawberry pancake in a stack on each plate. Drizzle with chocolate syrup and garnish with sliced strawberries.
