Make sugar-free peach jam using Splenda to enjoy summer in every bite.
Ingredients:
  • 3 cups peeled and chopped peaches
  • 0.75 cup water
  • 1 (1.75 ounce) package fruit pectin (such as Sure-Jell®)
  • 0.5 cup sucralose sugar substitute (such as Splenda®)
Instructions:
  • Check three 8-ounce jars for cracks and rust on the rings, discarding any damaged ones. Place them in simmering water until preserves are done. Clean new lids and rings with warm soapy water.
  • In a saucepan, combine peaches and water. Stir in pectin gradually until well combined. Bring to a high boil, stirring constantly. Boil and stir for 1 minute. Remove from heat and mix in sucralose. Use a metal spoon to skim off any foam.
  • Pour the hot jam into sterilized jars, leaving 1/8 inch of space at the top. Remove any air bubbles by running a knife around the inside of the jars. Wipe the rims clean with a damp paper towel, then seal tightly with lids.
  • 1. Position a rack in the bottom of a spacious stockpot and fill halfway with water. 2. Boil the water and carefully lower jars into the pot, spacing them 2 inches apart, using a jar holder. 3. Add more boiling water to ensure the jars are covered by at least 1 inch. 4. Bring to a gentle simmer, cover the pot, and process for 10 minutes.
  • Once finished cooking, carefully take out the jars from the stockpot and allow them to cool for 2 to 3 hours, ensuring they are spaced apart. To check for proper sealing, lightly press the center of each lid with your finger. If the lid is flexible and moves, refrigerate the jar as it requires proper sealing.
