Sweet egg noodle kugel - perfect for brunch or as a side dish for a dairy meal.
Ingredients:
  • 8 ounces wide egg noodles
  • 2 extra large eggs
  • 0.25 cup white sugar
  • 3 tablespoons butter, melted
  • 1 cup lowfat whipped cottage cheese
  • 8 ounces sour cream
  • 1 pinch salt and ground black pepper to taste
  • 2 tablespoons brown sugar, or to taste
Instructions:
  • In a large pot, bring salted water to a rolling boil. Add the egg noodles and cook until al dente, about 5 minutes. Drain in a colander.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C, if you prefer metric). Give a generous spritz of nonstick cooking spray to a 1-quart baking dish.
  • Combine the eggs and white sugar in a bowl until well mixed. Add melted butter, whipped cottage cheese, sour cream, salt, and pepper. Gently fold in the noodles and transfer the mixture to a baking dish. Sprinkle brown sugar on top before baking.
  • Bake until the top is golden brown in a preheated oven for 40 minutes. Allow to cool for 10 minutes before serving.
