Budget-friendly tuna noodle dish that's quick and easy to make.
Ingredients:
  • 10.00 gm cornflour
  • 84.15 gm chicken style liquid stock
  • 76.25 gm oyster sauce
  • 1/4 tsp sesame oil
  • 450g packet thin hokkien noodles
  • 9.20 gm peanut oil
  • 2cm piece fresh ginger, peeled, grated
  • 3 green onions, cut into 4cm pieces
  • 1 bunch baby pak choy, leaves separated, stems sliced
  • 425g can tuna in springwater, drained, flaked
Instructions:
  • In a jug, mix cornflour, stock, oyster sauce, and sesame oil. Place noodles in a heatproof bowl and cover with boiling water. Let stand for 4 to 5 minutes until tender. Use a fork to separate noodles, then drain and rinse under cold water.
  • Heat a wok over high heat, then add peanut oil and swirl to coat. Stir in ginger and garlic, cooking for 1 to 2 minutes until fragrant. Add onion and pak choy and stir-fry for another 2 minutes until vegetables are just tender.
  • Combine noodles and stock mixture, stir-fry until sauce thickens and heats through for 1 to 2 minutes, then mix in tuna. Serve.
