Elevate your Vietnamese meal with our authentic Nuoc Mam Pha dipping sauce.
Ingredients:
  • 73.20 gm fish sauce
  • 40.00 ml rice vinegar
  • 40.00 gm caster sugar (with more on hand if needed)
  • 3 limes, juice
  • 62.50 gm water (optional)
  • 2 garlic cloves, very finely chopped
  • 1 chilli, very finely diced
Instructions:
  • Combine the fish sauce and rice wine vinegar in a bowl, then incorporate the sugar until it dissolves.
  • Drizzle in the lime juice until the sauce is perfectly balanced, adjusting to taste as needed based on the limes' juiciness and acidity. Aim for roughly 80% of the juice as a starting point.
  • Adjust sugar to taste for balanced flavors. Lime juice will balance the fish sauce and sweetness; avoid overpowering lime flavor.
  • Add the garlic and chili to the mix.
