Nuoc Cham (Vietnamese Spicy Dipping Sauce)

Spicy Vietnamese dipping sauce made with fresh chiles, rice vinegar, lemon juice, fish sauce, garlic, and sugar.
Ingredients:
  • 3.5 fluid ounces water
  • 6 spicy red chile peppers, seeded and minced
  • 6 cloves garlic, minced
  • 0.25 cup fish sauce
  • 0.25 cup rice vinegar
  • 0.25 cup white sugar
Instructions:
  • Combine water, chile peppers, garlic, fish sauce, rice vinegar, and sugar in a saucepan. Heat over medium-low heat until sugar is fully dissolved. Remove from heat and let it cool completely for about 1 hour.
  • Incorporate the refreshing lemon juice into the chilled mixture.
