Oat and plum crumble muffins

Delicious oat and plum muffins - ideal for snacking!
Ingredients:
  • 225g self-raising flour
  • 45g rolled oats
  • 110g raw sugar
  • 2.50 gm ground cinnamon
  • 2 large plums, stoned, finely chopped
  • 125g butter, melted
  • 2 Free Range Eggs, lightly whisked
  • 140g yoghurt
  • 125ml milk
  • 2 plums, extra, stoned, thinly sliced
  • 35g plain flour
  • 40g butter, chopped
  • 20.00 gm rolled oats
  • 40.00 gm raw sugar or demerara sugar
  • 1.25 gm ground cinnamon
Instructions:
  • Preheat your oven to 180°C. Line a 12-hole muffin pan with paper cases. In a large bowl, mix flour, oats, sugar, and cinnamon. Add chopped plum and delicately toss to combine.
  • Combine whisked butter, egg, yoghurt, and milk with the flour mixture. Distribute evenly into muffin pans and garnish with sliced plum.
  • For the crumble topping, combine flour and butter in a bowl and rub them together until you get a breadcrumb-like mixture. Mix in oats, sugar, and cinnamon, then spread evenly on top of each muffin.
  • Bake for 25-30 minutes or until a skewer comes out clean when inserted in the centers. Transfer to a wire rack to cool slightly before serving warm or at room temperature.
