Allergy-friendly lunch treats perfect for kids on the go.
Ingredients:
  • 180g rolled oats
  • 170g oat flour
  • 155g brown sugar
  • 1 1/2 tsp xanthan gum
  • 1.25 gm bicarbonate of soda
  • 125g butter, melted
Instructions:
  • Preheat your oven to 180ºC and prepare a 19 x 29cm slice pan by greasing and lining it with baking paper, ensuring the paper overhangs on the two longer sides.
  • In a medium bowl, mix together oats, flour, sugar, xanthan gum, and bicarbonate of soda. Add butter and stir until well combined. Transfer mixture to the prepared pan and use the back of a spoon to smooth the surface.
  • Bake until golden brown and fully cooked, about 30 minutes. Let cool, then transfer to a clean surface and cut into twenty bars measuring 4 x 5cm each.
