Oatmeal Cookie Mix In a Jar

Homemade oatmeal cookie mix, can be stored up to 10 weeks in the fridge. Bake fresh cookies anytime!
Ingredients:
  • 6 cups rolled oats
  • 4 cups all-purpose flour
  • 3 cups packed brown sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1.5 teaspoons salt
  • 1 pound shortening
  • 2 cups raisins
  • 1.5 cups shredded coconut
  • 1 cup semisweet chocolate chips
Instructions:
  • Combine oats, flour, brown sugar, cinnamon, baking powder, baking soda, and salt in a large bowl. Use a pastry blender to cut in shortening until crumbly. Mix in raisins, coconut, chocolate chips, and pecans.
  • Chill in a sealed container for up to 10 weeks.
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a baking sheet by greasing it or lining it with parchment paper. In a large bowl, mix together 4 cups of the mix. Combine 1 egg, 2 tablespoons of milk, and 2 teaspoons of vanilla, then stir into the mix. Shape the dough into 1 1/2 inch balls and place them on the prepared baking sheet. Flatten each ball with a fork dipped in sugar. Bake in the preheated oven for 15 to 18 minutes until golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
