Cherished family recipe: Soft, nostalgic sugar cookies with hint of nutmeg, sandwiched with jam. Memories in every bite.
Ingredients:
  • 0.5 cup shortening
  • 0.75 cup packed brown sugar
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1.5 cups rolled oats
  • 1 tablespoon water
  • 0.75 cup any flavor fruit jam
Instructions:
  • Combine the shortening and sugar until creamy, then mix in the egg until fluffy.
  • Combine the flour, baking powder, and salt, then add to the creamed mixture. Mix in the oatmeal and water until well combined. Shape into a 2-inch roll and refrigerate for several hours or overnight.
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • Thinly slice cookie dough and bake at 375°F (190°C) for 6-8 minutes. Allow to cool, then assemble into jam-filled sandwiches.
