Irresistible oatmeal pie with creamy coconut topping, a delicious twist on pecan pie. Just mix, pour, bake, and enjoy with whipped cream.
Ingredients:
  • 2 eggs
  • 0.75 cup white sugar
  • 1 cup butter, melted
  • 0.75 cup dark corn syrup
  • 0.75 cup quick cooking oats
  • 0.25 teaspoon salt
  • 0.75 cup flaked coconut
  • 1 recipe pastry for a 9 inch single crust pie
Instructions:
  • In a medium bowl, vigorously mix the eggs until smooth. Add sugar, butter or margarine, corn syrup, oatmeal, vanilla, and salt, stirring until well combined. Transfer the mixture into the pie shell and sprinkle with coconut on top.
  • Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes, then allow to cool before serving.
