Delicious Oatmeal Pie resembling pecan pie, topped with nuts before baking. Makes two pies.
Ingredients:
  • 4 eggs
  • 1 cup flaked coconut
  • 1.5 cups dark corn syrup
  • 1.5 cups white sugar
  • 0.5 cup margarine, melted
  • 1.75 cups rolled oats
  • 1.75 cups evaporated milk
  • 2 9-inch pie crusts
Instructions:
  • Preheat oven to a toasty 350 degrees F (175 degrees C).
  • Combine eggs, corn syrup, and sugar until smooth. Stir in milk, melted margarine, coconut, and oatmeal. Divide the mixture evenly into two 9-inch pie shells.
  • Bake in a hot oven until the filling is beautifully browned and firm, approximately 40 minutes.
