Ingredients:
  • 2 eggs, beaten
  • 0.75 cup corn syrup
  • 0.75 cup packed brown sugar
  • 0.5 cup flaked coconut
  • 0.75 cup quick cooking oats
  • salt to taste
  • 1 recipe pastry for a 9 inch single crust pie
Instructions:
  • Combine eggs, corn syrup, brown sugar, coconut, oats, butter or margarine, and salt until blended. Transfer mixture into the unbaked pie shell.
  • Bake at 325 degrees F (165 degrees C) for 45 minutes or until golden and a knife inserted in the center comes out clean.
