Oatmeal Raisin Molasses Bread

Molasses sweetened yeast bread with oatmeal and raisins.
Ingredients:
  • 1 cup rolled oats
  • 0.75 cup molasses
  • 2 tablespoons butter
  • 1.5 cups boiling water
  • 1 tablespoon white sugar, divided
  • 0.25 cup warm water (about 100 degrees F/38 degrees C)
  • 2.5 teaspoons active dry yeast
  • 4.5 cups bread flour
  • 1.5 cups raisins
Instructions:
  • Add oats, molasses, butter, and salt to the bread maker bowl, then pour in the boiling water.
  • Take 1/4 teaspoon of sugar and place it in a small cup. Mix the remaining sugar into the oat mixture. Allow the mixture to cool to around 100 degrees F/38 degrees C for approximately 20 minutes.
  • Combine warm water with sugar in a small cup, then stir in the yeast.
  • Layer bread flour over the oat mixture followed by pouring the yeast mixture on top.
  • Choose the Dough setting and start the machine. Refer to your owner's manual to determine when to add raisins, typically 5 minutes before the kneading cycle ends. Allow the bread maker to complete the full cycle, approximately 1 hour, adjusting as needed based on your specific machine's settings.
  • Prepare the bread pans by greasing them.
  • Transfer the dough onto a lightly floured surface, gently deflate it without kneading, divide it into two portions, place each in a prepared pan, cover with a damp towel, and let rise for approximately 1 hour.
  • Preheat the oven to 350°F (175°C).
  • Bake until the top is golden brown and the bottom of loaf sounds hollow when tapped, for 15 to 20 minutes in a preheated oven.
