Classic cookies with a hint of orange zest. Store with fresh bread to keep them soft and fresh.
Ingredients:
  • 1 cup shortening
  • 1 cup brown sugar
  • 1 tablespoon grated orange zest
  • 3 tablespoons molasses
  • 3 cups rolled oats
Instructions:
  • In a large bowl, mix shortening, white sugar, and brown sugar until smooth. Add eggs one at a time, then mix in orange zest, molasses, and vanilla. Stir in flour, baking soda, and salt until combined. Fold in oats.
  • Split the dough in half and form into long logs measuring around 2 inches in diameter. Wrap in waxed paper and chill for a minimum of 8 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Cut the chilled dough into 1/4-inch thick rounds and arrange them 2 inches apart on ungreased cookie sheets.
  • Bake in a preheated oven for 11 to 13 minutes until the bottoms are lightly browned. Let cool on the baking pan for a minute then transfer to wire racks to cool completely.
