Indulgent brownie oat bars, a decadent treat perfect with a scoop of ice cream.
Ingredients:
  • 2.5 cups rolled oats
  • 0.75 cup all-purpose flour
  • 0.75 cup packed brown sugar
  • 0.5 teaspoon baking soda
  • 0.75 cup unsalted butter, melted
  • 3 cups white sugar
  • 1 cup unsalted butter, melted
  • 1 tablespoon vanilla extract
  • 4 eggs
  • 1.5 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Combine oats, 3/4 cup flour, brown sugar, baking soda, and 1/4 teaspoon salt in a bowl. Add melted butter and mix until coated. Set aside 3/4 cup of the mixture. Press the rest into the baking dish.
  • Bake in the preheated oven for 5 minutes until lightly browned.
  • In a bowl, mix together white sugar, 1 cup of melted butter, and vanilla extract. Add eggs one at a time to the sugar mixture, beating well after each addition until fully combined.
  • Combine 1 1/2 cups flour, cocoa powder, and 1 teaspoon salt in a bowl, then gently stir into the sugar-egg mixture until blended. Mix in chocolate chips, pour over oat crust, and sprinkle remaining oat mixture on top.
  • Bake in the oven until a toothpick inserted in the center of the brownies comes out clean, about 35-40 minutes.
