Southwestern casserole featuring canned beef tamales and cooked chicken for a quick and satisfying meal.
Ingredients:
  • 3 slices bacon
  • 16 canned beef tamales, cut into 2-inch pieces
  • 4 cups diced cooked chicken
  • 2 cups whole kernel corn, drained
  • 2 cups canned tomatoes, drained
  • 1 cup raisins
  • 0.5 cup stuffed green olives
  • 1 tablespoon chili powder
  • 0.25 cup butter
  • 1 cup chicken broth
  • 1 teaspoon Worcestershire sauce
  • 2 cups shredded sharp Cheddar cheese
Instructions:
  • Fry the bacon in a skillet on medium heat until it's golden brown and crispy. Then, crumble it and set it aside.
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 4 quart casserole dish.
  • Combine tamales, chicken, corn, tomatoes, raisins, and olives in a large bowl. Season with chili powder and salt. Transfer to the casserole dish and dot with butter. In another bowl, mix chicken broth and Worcestershire sauce, then pour over the casserole.
  • After baking for 45 minutes, sprinkle Cheddar cheese on top and bake for an additional 15 minutes until the cheese is melted and golden brown.
