Boiled whole chicken with homemade noodles and veggies creates a comforting, hearty dish.
Ingredients:
  • 1 (2 to 3 pound) whole chicken, cut into pieces
  • 4 stalks celery, diced
  • celery tops
  • 1 carrot, shredded
  • 1 onion, halved - unpeeled
  • ground black pepper to taste
  • 3 (32 fluid ounce) containers chicken broth
  • 2 eggs, beaten
  • 1 cup warm water
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 3 cups all-purpose flour
Instructions:
  • Heat a large pot over medium heat. Combine chicken, celery with tops, carrot, onion with peel, and pepper in the pot. Pour broth over the ingredients and bring to a boil. Cover, reduce heat, and simmer for about 45 minutes until chicken is tender and falls from the bone.
  • While the chicken is cooking, prepare the noodles by mixing together eggs, water, oil, salt, and sufficient flour to create a firm dough in a large bowl.
  • Separate the chicken stock, keeping the meat, celery, and carrots. Remove the meat from the bones and add it, along with the strained stock, celery, and carrots back into the pot. Bring to a boil. Create noodles by cutting the dough from a broth-dipped spoon or using scissors or your fingers to make small chickpea-sized noodles, then add them into the boiling water. Cook until the noodles rise to the surface.
