Old-Fashioned Chicken And Slick Dumplings

Fluffy dumplings soaked in flavourful chicken soup with carrots, onions, and potatoes.
Ingredients:
  • 4 pounds boneless, skinless chicken meat
  • 2 small carrots, sliced
  • 3 sweet potatoes, peeled and cubed
  • 3 Irish potatoes, cubed
  • 5 small onions
  • 5 cups water
  • salt to taste
  • ground black pepper to taste
  • 1 bay leaf
  • 3 stalks celery tops
  • 1 pinch cayenne pepper
  • 2 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1 teaspoon baking powder
  • 4 tablespoons rendered chicken fat
Instructions:
  • In a large pot, nestle the chicken and season with salt, pepper, a pinch of cayenne, a bay leaf, and a generous handful of celery tops. Fill the pot with water, then simmer until the chicken is cooked through. Remove the bay leaf, introduce your choice of vegetables, and simmer until they are almost tender.
  • Prepare the dumplings by combining flour, 1/2 teaspoon of salt, baking powder, and chicken fat. Gradually add water until a firm dough forms. Divide the dough into three portions, roll each out, and cut into squares.
  • Add one-third of the dumplings to the simmering chicken and cook for 5 minutes. Then, add another third of the dumplings and cook for an additional 5 minutes. Finally, add the remaining third of the dumplings and cook for 5 more minutes. Serve hot.
