Indulge in classic, fluffy yeast dinner rolls with this simple Southern-inspired recipe.
Ingredients:
  • 1 cup milk
  • 0.5 cup shortening
  • 0.25 cup white sugar
  • 1 cup cold water
  • 2 teaspoons active dry yeast
  • 5.5 cups all-purpose flour, divided
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1.5 teaspoons salt
Instructions:
  • In a small saucepan, gently heat the milk until it bubbles, then remove from heat. Stir in the shortening and sugar until melted. Mix in the cold water and allow it to cool until just warm.
  • Transfer the creamy milk mixture into a spacious bowl. Incorporate the egg and yeast, ensuring they are well combined. Stir in 3 cups of flour and allow the mixture to rest for 20 minutes.
  • Sift in baking powder, baking soda, salt, and 1 cup flour. Gradually stir in the rest of the flour, adding 1/2 cup at a time and mixing well after each addition. Once the dough comes together, transfer it to a lightly floured surface and knead until smooth and elastic for about 8 minutes. Lightly oil a large bowl, place the dough inside, and coat it with oil. Cover with a damp cloth and let it rise in a warm place until it doubles in volume, which takes about 1 hour.
  • Divide dough into 12 equal pieces, then shape each piece into 24 rolls. Place the rolls in a lightly greased 9x13-inch baking pan or on greased baking sheets. Cover with a damp cloth and let rise until doubled, about 40 minutes. Preheat the oven to 350°F (175°C).
  • Bake until golden brown in the preheated oven for 15-20 minutes.
