Delicious coconut walnut bars with a golden brown sugar crust - a family favorite!
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 cup firmly packed brown sugar
  • 1 cup sifted all-purpose flour
  • 1 cup firmly packed brown sugar
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.125 teaspoon salt
  • 1 cup chopped walnuts
  • 1 cup flaked coconut
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease an 8x12-inch baking pan.
  • Cream together butter, 1/2 cup brown sugar, and 1 cup flour in a bowl with an electric mixer until smooth. Press mixture into the prepared pan.
  • Bake in the preheated oven for around 20 minutes until set but not golden. Take out of the oven and lower the temperature to 325 degrees F (165 degrees C).
  • In a bowl, use an electric mixer to beat together 1 cup of brown sugar, eggs, 2 tablespoons of flour, vanilla extract, baking powder, and salt until light and fluffy, about 2 minutes. Then, mix in walnuts until well combined but not pureed. Spread the mixture over the crust and sprinkle with coconut.
  • Bake in the preheated oven for about 25 minutes until perfectly set, then slice while warm.
