Create a quick and affordable dinner with just 6 simple ingredients!
Ingredients:
  • 36.40 gm olive oil
  • 1 chorizo sausage, thinly sliced
  • 2 medium red onions, halved, thinly sliced
  • 16.00 gm brown sugar
  • 200g grape tomatoes, halved
  • 1 sheet frozen ready-rolled puff pastry, partially thawed
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Heat half of the oil in a 22cm non-stick, ovenproof frying pan over medium-high heat. Cook chorizo until golden, about 1-2 minutes per side. Drain on paper towels.
  • In a pan, heat the remaining oil over medium-low heat. Stir in the onion and cook for 10 to 12 minutes until very soft. Sprinkle sugar over the onion and cook, stirring, for 2 to 3 minutes until caramelized. Then add the tomato and cook for 2 more minutes until just soft. Finish by topping with chorizo.
  • Shape the pastry into a circle and drape it over the onion mixture, ensuring edges are tucked in. Bake for 25-30 minutes until golden. Invert onto a plate, slice, and enjoy.
