Ingredients:
  • 6 egg yolks, at room temperature
  • 40.00 gm caster sugar
  • 57.20 gm honey
  • 250ml (1 cup) fresh orange juice
  • 6 plums, halved, seeds removed, sliced into wedges, to serve
  • 12 savoiardi sponge finger biscuits, to serve
Instructions:
  • Combine the egg yolks, sugar, and honey in a bowl. Use a hand-held electric beater to whip until the mixture is pale and thick.
  • Create a double boiler by setting the bowl over gently simmering water. Ensure the bowl doesn't touch the water. Beat the egg mixture while slowly incorporating the orange juice for 5 minutes until the mixture thickens by half and forms trails when the beaters are lifted.
  • Place plum wedges in individual serving bowls, generously spoon orange and honey zabaglione over the plums, and serve promptly alongside savoiardi.
