Warm hazelnut & orange honey cakes

Moist cakes with honey and orange zest, perfect for any occasion.
Ingredients:
  • Melted butter, to grease
  • 1 x 340g pkt golden butter cake mix
  • 100g hazelnut meal
  • 20.00 ml finely grated orange rind
  • 2 eggs
  • 60g butter, at room temperature
  • 185ml (3/4 cup) milk
  • 60ml (1/4 cup) fresh orange juice
  • 1 orange
  • 80ml (1/3 cup) honey
  • Tamar Valley Greek Style Yoghurt, to serve
Instructions:
  • Preheat the oven to 180C. Grease six 250ml (1-cup) dariole or pudding moulds with melted butter and place them on a baking tray.
  • In a bowl, mix together the cake mix, hazelnut meal, and orange rind. Incorporate the eggs, butter, milk, and orange juice. Beat with an electric mixer until smooth.
  • Distribute the egg mixture evenly into the moulds. Bake for 40 minutes or until a toothpick inserted in the centers comes out clean. Let cool for 5 minutes before unmolding onto serving plates.
  • Zest the orange using a zester or vegetable peeler, making sure to remove the white pith. Cut the rind into very thin strips.
  • Gently warm the honey in a saucepan till it's liquid. Drizzle the warm honey over the cakes, then sprinkle with orange zest and serve with yogurt.
