Transform your holiday table with this simple show-stopping glazed ham.
Ingredients:
  • 7kg leg or shoulder of ham, on the bone
  • 170g (1/2 cup) orange marmalade
  • 100g (1/2 cup, firmly packed) brown sugar
  • 95g (1/3 cup) wholegrain mustard
Instructions:
  • Preheat the oven to 160°C while placing one shelf in the lowest position. Keep only that shelf in the oven. Using a small, sharp knife, cut around the ham shank in a zigzag pattern about 10cm from the end. Trace the knife around the edge of the ham and carefully remove the rind in one piece by separating it from the fat with your fingers. Wrap the rind in a damp tea towel and refrigerate it. Score the fat in a diamond pattern.
  • Pour a splash of water into a spacious roasting pan. Position the ham on a wire rack inside the pan.
  • In a saucepan, mix the marmalade and sugar over low heat for 2-3 minutes until the marmalade melts. Take off the heat and stir in the mustard.
  • Coat the ham evenly with half of the delicious marmalade glaze. Bake until it's warmed through and turns a lovely light golden color, for about 1 hour and 20 minutes.
  • Preheat the oven to 180°C. Drizzle the remaining glaze over the ham and bake for an additional 10-15 minutes until beautifully golden and caramelized. Then, transfer the ham to a serving tray, tent loosely with foil, and let it rest for 15 minutes before slicing.
