Orange chocolate buttermilk muffins: Moist and irresistible!
Ingredients:
  • 2 cups all-purpose flour
  • 4 (1 ounce) squares semisweet chocolate, grated
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 6 tablespoons margarine, softened
  • 0.75 cup white sugar
  • 2 eggs
  • 1 tablespoon orange zest
  • 0.25 cup orange juice
  • 0.5 cup buttermilk
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare a 12-cup muffin pan by greasing it lightly or lining with paper liners.
  • Combine flour, semisweet chocolate, baking powder, baking soda, and salt in a medium bowl.
  • In a different bowl, mix margarine and sugar until smooth. Add eggs one by one, followed by orange zest, orange juice, and buttermilk. Combine with the flour mixture until evenly moist. Spoon batter into muffin cups.
  • Bake until a toothpick inserted into the center of a muffin comes out clean, about 15 to 20 minutes in the preheated oven. Allow muffins to cool in the pan on a wire rack for a minimum of 10 minutes before removing.
