Orange Scones

Fluffy orange scones topped with tangy marmalade and smooth cream.
Ingredients:
  • 450g (3 cups) self-raising flour
  • 40.00 gm caster sugar
  • 4.00 gm baking powder
  • 40g chilled butter, chopped
  • 200ml Pure Cream
  • 1 orange, rind finely grated, juiced
  • 80ml (1/3 cup) milk
  • Orange marmalade, to serve
  • 2 x 200ml ctns Pure Cream
  • 4.40 gm vanilla extract
  • 12.00 gm icing sugar
Instructions:
  • Preheat the oven to 190/170C fan forced. Line a large oven tray with baking paper. In a large bowl, mix the flour, sugar, and baking powder. Use your fingertips to blend in the butter until the mixture looks like coarse breadcrumbs. Create a well in the center and pour in the cream, orange rind, and 60ml (1/4 cup) orange juice. Stir with a flat-bladed knife until the dough just comes together.
  • Transfer the dough onto a lightly floured surface and knead until it's nearly smooth. Flatten the dough to a 2cm thickness and cut out 16 rounds using a 6cm cutter.
  • Arrange the discs on the tray in a circle, ensuring they touch. Brush the tops with milk. Bake for 15-20 minutes or until golden and puffed. Let them cool on the tray.
  • In a large bowl, use a balloon whisk to whisk the cream until soft peaks form. Mix in the vanilla and sugar. Serve the whipped cream and marmalade with the split scones.
