Sweet and savory pork stir-fry with orange, pineapple, and carrots - perfect for a quick and delicious midweek dinner!
Ingredients:
  • 3 tablespoons all-purpose flour
  • 2 tablespoons water
  • 0.33333334326744 cup rice vinegar
  • 0.25 cup lemon juice
  • 2 tablespoons orange juice
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 pound boneless pork chops
  • 1 cup shredded carrots
  • 1 (8 ounce) can pineapple chunks, drained and cut in half
  • 1 cup diced orange wedges
  • 1 cup hot cooked rice
Instructions:
  • Combine 3 tablespoons of flour and 2 tablespoons of water in a 3-quart saucepan, whisking until smooth.
  • Combine water, brown sugar, rice vinegar, lemon juice, orange juice, garlic, and onion powder in a bowl. Gradually pour into the flour-water mixture in a saucepan, stirring constantly. Bring to a boil over medium-high heat, stirring occasionally. Cook until the sauce thickens, about 3 to 5 minutes. Remove from heat.
  • In a resealable plastic bag, mix 1/4 cup of flour with salt and pepper. Cut the pork into bite-sized pieces, then add them to the bag with the flour mixture. Shake until the pork is evenly coated.
  • In a 5-quart skillet, melt butter over medium heat. Brown pork pieces for 3 to 5 minutes. Stir in carrots and sauce, bring to a simmer, and cook for 5 minutes. Add pineapple and orange, then simmer for an additional 5 minutes, stirring occasionally.
  • Spoon the savory dish over a bed of fluffy cooked rice.
