Outrageous Caramel-Fudge Brownies

Enjoy massive caramel walnut brownies.
Ingredients:
  • 1 bag (14 oz) caramels, unwrapped
  • 1/2 cup evaporated milk (from 12-oz can)
  • 1 cup butter or margarine
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 4 eggs, slightly beaten
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 3/4 cup unsweetened baking cocoa
  • 1/4 teaspoon salt
  • 1 bag (11.5 or 12 oz) semisweet chocolate chunks (2 cups)
  • 1 1/2 cups chopped pecans
  • 1 teaspoon vegetable oil
Instructions:
  • Preheat the oven to 350°F. Grease a 13x9-inch pan with shortening or cooking spray. In a 3-quart saucepan, melt caramels with milk over low heat, stirring frequently, until smooth.
  • In a 2-quart saucepan, gently melt butter over low heat. Remove from heat and whisk in sugar, vanilla, and eggs until smooth. Fold in flour, cocoa, and salt. Mix in 1 1/2 cups of chocolate chunks and 1 cup of pecans. Spread the batter evenly in the pan.
  • Evenly pour the melted caramel over the batter ensuring it covers the entire surface. Bake for 35 to 40 minutes or until set, making sure to prevent large pockets of caramel and avoid it reaching the bottom of the bars.
  • In a small saucepan, melt 1/2 cup chocolate chunks with oil over low heat, stirring until smooth. Drizzle over warm brownies, sprinkle with 1/2 cup pecans, and press lightly. Cool for 20 minutes, then refrigerate for about 1 hour and 30 minutes until chocolate is set. Cut into 6 rows by 4 rows. Let stand at room temperature for 20 minutes before serving if refrigerated longer.
