Strawberry Pie with Cereal-Pretzel Crust: A burst of flavors in every bite.
Ingredients:
  • 1 cup boiling water
  • 1 box (4-serving size) wild strawberry-flavored gelatin
  • 2/3 cup Yoplait® 99% Fat Free creamy strawberry or creamy vanilla yogurt (from 2-lb container)
  • 1 1/4 cups Chex™ cereal
  • 1 1/4 cups small pretzel twists
  • 1/3 cup butter or margarine, melted
  • 1 1/2 cups sliced fresh strawberries
  • 1 cup fat-free whipped topping
  • 4 medium fresh strawberries, cut in half
Instructions:
  • In a medium bowl, pour boiling water over the gelatin and stir until fully dissolved. Add yogurt and continue stirring until smooth. Cover and refrigerate for about 1 hour and 30 minutes until it thickens, but is not fully set.
  • Preheat oven to 350°F. Combine cereal and pretzels in a plastic bag; crush with a rolling pin until you have 1 1/2 cups. Mix the crushed mixture with melted butter in a small bowl until well combined. Press the mixture firmly into the bottom of an ungreased 9-inch glass pie plate. Bake for around 10 minutes, or until the crust turns a light golden brown. Let it cool before using.
  • Whip the gelatin mixture with an electric mixer on high speed for 7 to 8 minutes until it doubles in volume. Gently fold in the sliced strawberries and pour the mixture over the crust. Cover and refrigerate for at least 1 hour until it sets.
  • When ready to enjoy, slice the pie into wedges and garnish with a dollop of whipped topping and fresh strawberry halves. Remember to store any leftovers in the refrigerator.
