Summer-perfect oven-roasted grape tomatoes with a sprinkling of fresh herbs make a delicious side or sandwich addition.
Ingredients:
  • 1 pound grape tomatoes, halved
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 5 fresh basil leaves, chopped
  • 1 teaspoon chopped fresh thyme
  • salt to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Lay tomatoes on a big piece of foil. Drizzle with olive oil and sprinkle garlic, basil, thyme, and salt over them. Wrap the foil tightly to seal in the juices.
  • Roast in the preheated oven until tomatoes are soft and juicy, approximately 30 minutes. Allow to cool for a bit.
