Elevate your dinner with pistachio-crusted salmon paired with spinach and freekeh.
Ingredients:
  • cooking spray
  • 1 tablespoon butter
  • 1 tablespoon grapeseed oil
  • 4 (4 ounce) salmon fillets with skin
  • 2.5 teaspoons Greek seasoning (such as Cavender's®), divided
  • 0.25 cup crushed pistachios
  • 0.25 cup panko bread crumbs
Instructions:
  • Preheat the oven to 375°F (190°C) while you prepare a lined and greased baking sheet with aluminum foil and cooking spray.
  • Melt butter in a microwave-safe bowl for 15 to 30 seconds. Allow to cool slightly, then mix in grapeseed oil.
  • Lay the salmon fillets skin-side down on the baking sheet. Brush them with the flavored butter and evenly sprinkle with 1 1/2 teaspoons of Greek seasoning.
  • Combine crushed pistachios, bread crumbs, and the remaining teaspoon of Greek seasoning in a small bowl, then sprinkle the mixture evenly over the salmon.
  • Cook the salmon in the preheated oven until it easily flakes with a fork, approximately 20 minutes.
