Za'atar-marinated chicken roasted to perfection, served with couscous or roasted potatoes.
Ingredients:
  • 4 boneless, skinless chicken breasts
  • 3 tablespoons za'atar seasoning, divided
  • 1 clove garlic, minced
Instructions:
  • Flatten chicken breasts to 1-inch thickness for even cooking, then transfer to a large resealable plastic bag.
  • Mix together 2 tablespoons of za'atar seasoning, lemon juice, olive oil, and garlic in a small bowl. Drizzle the mixture over the chicken, ensuring it's well coated. Seal the bag and chill in the refrigerator for 2 to 8 hours.
  • Preheat the oven to 400 degrees F (200 degrees C). Prepare a baking sheet by lining it with aluminum foil and coating it with cooking spray.
  • Arrange the chicken breasts on the baking sheet and generously sprinkle with the remaining za'atar seasoning.
  • Roast the chicken in the preheated oven for 23-25 minutes until no longer pink in the center. Ensure the juices run clear and use an instant-read thermometer to confirm the internal temperature reaches 165°F (74°C). Finish by seasoning with salt.
