Indulge in a delightful Bisquick® pineapple bake, topped with creamy goodness and fresh strawberries.
Ingredients:
  • 1 container (15 oz) ricotta cheese
  • 1 container (8 oz) pineapple cream cheese spread
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup Original Bisquick™ mix
  • 1 cup sour cream
  • 1/2 cup sugar
  • 1/4 cup butter or margarine, softened
  • 1/2 cup pineapple juice
  • 6 eggs
  • 1/2 cup sour cream
  • 3/4 cup strawberry preserves
Instructions:
  • Generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray. Combine all filling ingredients in a medium bowl and mix until fully blended; then set aside.
  • Mix all batter ingredients in a medium bowl using a wire whisk or fork until thoroughly combined. Pour the batter into a baking dish and then evenly distribute the filling over the batter. Cover the dish and refrigerate for at least 8 hours or overnight.
  • Preheat the oven to 325°F. Bake the uncovered baking dish for 55 to 60 minutes until it turns golden brown and the center is set. Allow it to rest for 10 minutes before serving and garnish each serving with sour cream and strawberry preserves.
