Overnight Mediterranean Lasagna

Indulge in a savory Mediterranean lasagna layered with frozen spinach and a trio of cheeses for a delightful dinner experience.
Ingredients:
  • 1 (26 to 28-oz.) jar basil and tomato-flavored tomato pasta sauce
  • 1 (2 1/4-oz.) can sliced ripe olives, drained
  • 1 cup water
  • 1 (15-oz.) container ricotta cheese
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano leaves
  • 8 uncooked lasagna noodles
  • 16 oz. (4 cups) shredded mozzarella cheese
  • 1 (4-oz.) pkg. basil and tomato feta cheese, crumbled
  • 1 (9-oz.) pkg. frozen spinach, thawed, well drained
Instructions:
  • Combine pasta sauce, olives, and water in a medium bowl, blending well. In a separate medium bowl, mix ricotta cheese, lemon juice, and oregano until well combined.
  • Spread a luxurious layer of 1 cup of pasta sauce mixture in a 13x9-inch (3-quart) glass baking dish or lasagna pan. Place 4 uncooked noodles on top, followed by a decadent arrangement of half of the ricotta cheese mixture, along with generous portions of half of the mozzarella cheese and feta cheese, finishing with a delightful heap of all the spinach.
  • Continue building delicious layers by spreading another 1/2 cup of sauce mixture, placing the remaining 4 noodles, sprinkling 1 cup of the remaining mozzarella cheese, layering the remaining ricotta mixture, scattering the remaining feta cheese, and finally topping it off with the last of the sauce mixture. Cover tightly with plastic wrap and refrigerate for at least 12 hours or overnight to allow all the flavors to meld beautifully.
  • Preheat oven to 350°F. Bake the uncovered casserole for 35 minutes. Sprinkle the remaining 1 cup of mozzarella cheese on top. Bake for an additional 15 to 20 minutes until the casserole is bubbly, noodles are tender, and cheese is melted. Allow it to rest for 15 minutes before serving.
