Elevate your party with these unique chocolate cupcakes!
Ingredients:
  • 250g butter, chopped
  • 200g dark chocolate, chopped
  • 430.00 gm caster sugar
  • 225.00 gm self-raising flour
  • 187.50 ml plain flour
  • 42.90 gm cocoa powder
  • 2 eggs, lightly beaten
  • 5 x 200g packets round chocolate-coated biscuits (see note)
  • 48 white choc melts
  • blue food colouring
  • 24 white tic tacs
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced, and line two 1/3-cup capacity 12-hole muffin pans with paper cases for the chocolate cupcakes.
  • In a large saucepan over medium heat, combine butter, 1 1/2 cups cold water, chocolate, and caster sugar. Stir continuously for 5 minutes until melted. Allow to cool for 10 minutes before proceeding.
  • In a large bowl, sift the flours and cocoa. Slowly pour in the cooled chocolate mixture while stirring with a wooden spoon until smooth. Add the egg and stir until well combined.
  • Transfer the prepared mixture into the pans and bake for 30 minutes, or until a skewer inserted into the center of a cake comes out clean. Cool in pans for 5 minutes before transferring to a wire rack to cool further.
  • Prepare the icing: With an electric mixer, whip butter until light and fluffy for approximately 5 minutes. Gradually add icing sugar and milk, making sure to beat well after each addition. Set aside 2 tablespoons of the frosting. Mix cocoa powder into the rest of the frosting and beat until incorporated. Transfer half of the chocolate frosting into a piping bag with a 5mm fluted nozzle. Store the leftover chocolate frosting for later use.
  • Slice 24 biscuits in half crossways using a hot sharp knife, trimming if needed. Set them aside for the ears.
  • Take the chocolate melts and pipe a small dot of frosting on the back of each one. Place them on top of the chocolate biscuits and press gently to secure them. Repeat this step for all the remaining melts and biscuits to create a total of 48 eyes.
  • Frost the top of a cupcake with chocolate frosting, then place 2 biscuit halves on top to make ears. Add more frosting under the ears if needed for support. Place 2 biscuit eyes on the cupcake. Color some plain frosting blue, pipe a dot of blue frosting in the center of each chocolate melt for pupils. Pipe chocolate frosting between the ears for feathers. Place a tic tac below the eyes for a beak. Repeat with the rest of the cupcakes and decorations. Serve and enjoy!
