Succulent oyster stuffing, perfect for a 10-12 pound turkey. From ThanksgivingRecipe.com.
Ingredients:
  • 5 stalks celery, diced
  • 1.5 cups chopped onion
  • 5 cups crumbled cornbread
  • 0.5 cup chopped, cooked turkey giblets
  • 8 ounces shucked oysters
  • 0.25 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon dried sage
  • 0.5 teaspoon ground nutmeg
  • 2 cups chicken stock
Instructions:
  • Saute the celery and onions in a skillet until the onions are translucent.
  • In a large bowl, mix together crumbled cornbread, cooked celery, onions, giblets, oysters, parsley, basil, salt, paprika, sage, and nutmeg until well combined.
  • Whisk the 2 eggs until smooth. Combine the eggs and chicken stock with the stuffing mixture. Fill the bird's cavity with the stuffing. Remove the cooked stuffing promptly. Alternatively, bake the stuffing in a large casserole dish at 350°F (175°C) for about 1 hour and 20 minutes.
