Decadent baked oysters loaded with bacon, shrimp, and mushrooms, then topped with herbs and breadcrumbs.
Ingredients:
  • 1 cup rock salt, or as needed
  • 2 strips bacon, cut into small pieces
  • 1/2 cup mushrooms, chopped
  • 3 to 4 medium raw shrimp, deveined, shelled, and roughly chopped
  • 1 dozen freshly shucked oysters with their liquor, reserving shells
  • 3 Tablespoons unsalted butter, divided
  • 2 green onions, chopped, white and green parts, separated
  • 1 clove garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 large egg yolk
  • 1/4 cup chopped fresh parsley
  • 1/2 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1/2 tsp salt
  • 3 tablespoons seasoned bread crumbs
  • Lemon wedges, for serving
  • Fresh parsley sprigs for optional garnish
Instructions:
  • Preheat the oven to 450 degrees F (230 degrees C) and generously coat a sheet pan with rock salt.
  • Fry bacon in a small non-stick skillet over medium heat until golden and crisp, around 5 minutes. Transfer the bacon to a plate and keep it aside.
  • Heat the remaining bacon fat and butter in the skillet. Sauté mushrooms until tender, about 3-4 minutes. Add shrimp and cook until opaque and firm, around 2 minutes. Remove mushrooms and shrimp from skillet using a slotted spoon, and keep warm.
  • Drain the oysters, saving 1/2 cup of the oyster liquor. Arrange 12 oyster half shells on a bed of rock salt on the pan, placing one oyster in each shell.
  • In a 9-inch skillet over medium heat, melt the remaining 2 tablespoons of butter. Sauté the white parts of green onions for about 3 minutes. Add minced garlic and cook until fragrant, approximately 30 seconds. Slowly stir in flour until a smooth mixture forms. Remove from heat.
  • In a small bowl, combine egg yolk, parsley, and cream. Stir in mixture with green onion and flour until well combined. Mix in oyster liquor, then cook over low heat, stirring constantly until sauce is thick and creamy.
  • Combine the mushroom and shrimp mixture with Parmesan cheese, and salt in the sauce, stirring until the cheese is melted and fully incorporated.
  • Drizzle sauce over oysters, then top with crispy bacon pieces and flavorful bread crumbs.
  • Bake until golden brown in the preheated oven for approximately 15 minutes.
  • Sprinkle on the reserved chopped green onion tops and fresh parsley sprigs. Serve right away with lemon wedges.
