Indulge in decadent Oysters topped with creamy creme fraiche and briny salmon roe for a luxurious appetizer.
Ingredients:
  • 125g (1/2 cup) creme fraiche or sour cream
  • 20.00 ml finely chopped fresh chives
  • 11.80 gm horseradish
  • 5.30 gm fresh lemon juice
  • Salt & freshly ground black pepper
  • Rock salt, to serve
  • 48 (4 dozen) natural oysters (such as Sydney rock oysters), in the half shell
  • 50g salmon roe
  • Lemon wedges, to serve
Instructions:
  • Combine the creme fraiche, chives, horseradish, and lemon juice in a small bowl. Stir well to blend the flavors, then season with salt and pepper to taste.
  • Sprinkle the rock salt on a large serving platter, lay the oysters on top, and add half a teaspoon of creme fraiche on each oyster.
  • Place a generous amount of vibrant salmon roe on top of the oysters. Seal with plastic wrap and refrigerate until serving time, or present immediately alongside fresh lemon wedges.
