Oysters with lemon dressing

Elegant Christmas oysters, ideal as a festive starter.
Ingredients:
  • 24 Pacific oysters, in half shell
  • 2 tomatoes, halved, deseeded, chopped
  • 2 green shallots, ends trimmed, finely chopped
  • 85g (1/3 cup) whole-egg mayonnaise
  • 21.00 gm fresh lemon juice
  • 20.00 gm water
  • 1 garlic clove, crushed
  • Pinch of salt
Instructions:
  • Plate the oysters elegantly on a serving platter.
  • In a medium bowl, gently mix together the tomato and shallot. Spoon a small amount of the tomato mixture onto each oyster.
  • Combine mayonnaise, lemon juice, water, and garlic in a jug. Stir until mixture is smooth. Season with salt to taste.
  • Drizzle oysters with zesty lemon dressing before serving.
