Oysters with little lemon sandwiches

Ingredients:
  • 1 thin-skinned lemon
  • 12 freshly shucked oysters
  • 4 slices thin wholemeal bread
  • 20.00 gm butter, softened
Instructions:
  • Peel and thinly slice the lemon, removing any seeds as you go.
  • Place 2 slices of bread on a work surface and evenly spread with butter. Arrange lemon slices on top and sprinkle with salt and pepper. Cover with the other slices of bread, trim the crusts, and cut into triangles. Season oysters with black pepper and serve with lemon sandwiches.
